Serve with diced chilled cucumber for a cool contrast. Add lemon at the end to keep its acidity bright.

3. Peach Ginger Turkey Meatball Bowls

4. Tomato Basil Chickpeas With Zucchini

Add three drained 15 oz cans chickpeas, 28 oz crushed tomatoes, ¾ cup vegetable broth, 2 minced garlic cloves and 1 tsp oregano to the cooker. Cook on LOW for 4–5 hours, adding 2 thickly sliced zucchini for the final 40 minutes and ¼ cup torn basil at serving.

Do not add zucchini at the start unless you prefer it very soft. A splash of balsamic vinegar finishes the tomato sauce nicely.

5. Pineapple Lime Pulled Pork Lettuce Bowls

Put 2½ lb thawed boneless pork shoulder in a 7 qt cooker with an 8 oz can pineapple chunks with juice, ½ cup broth, 2 tbsp soy sauce and 1 tsp grated ginger. Cover on LOW for 8–9 hours until pork shreds easily, then add 2 tbsp lime juice and serve over chilled bagged slaw.

Pork shoulder is the cut to use for long shredding recipes. Keep slaw cold and undressed until dinner.

6. Citrus Herb Chicken With Summer Corn

Fresh corn adds a sweet bite to savory herb chicken. Orange zest and parsley make the cooking juices smell fresh.

Put 1½ lb thawed chicken thighs into the pot with ½ cup orange juice, ½ cup broth, 1 tsp dried thyme and zest from 1 orange. Cook on LOW for 4–5 hours until chicken reaches 165°F, adding 2 cups corn kernels for the last 20 minutes and ¼ cup parsley at serving.

Frozen corn works if fresh ears are not available. Do not simmer the parsley for hours because its color and scent will fade.
