4. Thursday: Cumin Beef and Lentil Vegetable Stew

Thursday suits a long-cooking stew that makes the house smell like supper. Lentils help a little beef stretch into a generous bowl.

Layer 1 lb rinsed diced potatoes, 2 carrots and ¾ cup rinsed brown lentils beneath 1½ lb thawed cubed chuck with 4 cups beef broth, 14 oz diced tomatoes and 1 tsp cumin. Cover on LOW for 8–9 hours until beef and lentils are tender, adding hot water if the stew thickens too much.
