Combine 14 oz cubed extra-firm tofu, 2 cups shelled edamame, 2 sliced carrots, ½ cup vegetable broth, 2 tbsp reduced-sodium soy sauce and 1 tbsp fresh ginger. Cook covered on LOW for 3–4 hours until vegetables and edamame are thoroughly hot, then add 1 tbsp rice vinegar.
Use extra-firm tofu so the cubes stay together. Stir with a wide spoon rather than breaking the tofu with a fork.
4. Tomato Lentil Spinach Chicken Soup

Lentils turn a light chicken soup into a proper supper. Tomato and spinach keep the broth fresh and colorful.
Add 1 lb thawed boneless chicken thighs, ¾ cup rinsed red lentils, 14 oz diced tomatoes, 4 cups chicken broth, 2 chopped carrots and 1 tsp dried basil. Cook on LOW for 5–6 hours until chicken reaches 165°F and lentils are tender, then stir in 3 cups baby spinach for the final 10 minutes.
Do not put spinach in at the beginning because it will lose its color. Shred chicken into the soup for even portions.
